1 1/2 cups chocolate wafer crumbs, about 26 wafers
1/4 cup butter
1 envelope unflavored gelatin
1/2 cup milk
1/4 cup water
1/2 cup sugar
1/4 tsp. salt
1/2 cup very strong coffee
2 squares unsweetened chocolate, melted
1 tsp. vanilla
2 cups heavy cream
1 tbsp. sugar
1 tbsp. coffee flavored liqueur

Combine chocolate wafer crumbs and butter in a small bowl, blend well. Press firmly into even layer over bottom and sides of 9 inch pie plate.
Preheat oven to 375 degrees. Bake for 5 minutes. Cool on wire rack to room temperature.
Combine gelatin, milk, water, 1/2 cup sugar and salt in medium-size saucepan. Cook over low heat, stirring constantly, until gelatin is dissolved. Remove from heat. Gradually stir coffee into melted chocolate, then stir in gelatin mixture until smooth. Stir in vanilla. Cool mixture, stirring occasionally, until slightly thickened.
Whip one cup heavy cream in small bowl until smooth. Fold into cooled chocolate. Pile into crust and refrigerate for 4 hours.
To serve, whip remaining 1 cup cream with 1 tbsp. sugar and coffee flavored liqueur until stiff. Spoon or pipe on top of pie.
