New York Style Cheesecake Recipe

6 or 7 graham crackers
1 tsp. granulated sugar
6 tbsp. melted butter

Filling:
4 (8 oz.) cream cheeses, softened
1¼ c. granulated sugar
6 eggs, room temperature
¼ c. sour cream
1½ tsp. real Watkins vanilla

Preheat oven to 350º.

Crust:
Using a food processor, pulse graham crackers, butter and sugar until finely chopped.

Press mixture into bottom of an 8-inch springform pan evenly.

Bake crust for 8 minutes. Let cool before pouring filling in pan, about 10 minutes.

Filling:
Preheat oven to 450º.

Mix cream cheeses and sugar for 5 minutes or until fluffy. Add eggs, one at a time, sour cream and vanilla until combined well. Do not over mix. Set aside.

Use two pieces of heavy duty foil to wrap around springform pan to keep water out.

Pour cheesecake filling on top of crust. Place cheesecake pan into large roasting pan and pour boiling hot water about 3/4 of the way up the roasting pan.

Bake on 450º for 15 minutes. After 15 minutes, reduce heat to 225º and continue baking cheesecake for 1 hour. Do not over bake.

After removing the cheesecake, let sit in water bath for 45 minutes. Then put on wire rack or let sit on counter until it reaches room temperature.

Cover with plastic wrap and refrigerate overnight or let set at least 6 hours before serving.
