1 Cup Smooth Peanut Butter
½ Cup Packed Light Brown Sugar
½ Cup Sugar
1 Large Egg
1 Teaspoon Baking Soda
1 Teaspoon Vanilla
¼ Teaspoon Salt

Directions:

1. Preheat oven to 350ºF. Line cookie sheet or jelly roll pan with parchment paper. Set aside.
2. In a large bowl, combine peanut butter and sugars with a stiff spatula until well combined. Add egg, remaining ingredients and mix until well combined.
3. Drop balls of dough onto prepared cookie sheet. Flatten a bit with tines of a fork. Sprinkle with additional sugar (optional).
4. Bake for 10 minutes. Let cool on pan for 3 minutes before removing to cooling rack. Let cool completely before gorging yourself!

I like to add sanding sugar just before popping them into the oven. Definitely optional! This is gluten free because there is no flour involved. Mikayla and Logan love these cookies.
