Papa's Pea-Pickin' Cake Recipe

1/2 cup of oil
4 eggs
1 11oz. can of mandarin oranges
1 16oz. can of crushed pineapple
1 large tub of Cool Whip
1 large box of instant vanilla pudding mix

Preheat oven to 325ºF

Grease and flour 3 9in. circular baking pans.

Follow cake instructions on box by mixing oil and eggs into the cake mix. Strain half of the juice off of the mandarins, then pour into the cake batter and mix gently.

Divide batter evenly between the 3 baking pans. Put in oven for about 25 minutes or until golden brown. If you're not sure if the cake is ready yet, insert a toothpick into the center of the cake. If it comes out clean it's done baking, if it comes out with batter on it, it needs a few more minutes.

While the cake is baking mix the topping. In a large bowl add the Cool Whip, crushed pineapple (completely drained), and the vanilla pudding mix and gently fold together until incorporated. You don't want any of the pudding mix left in chunks or stuck to the bottom of the bowl. Refrigerate until the cake layers are ready to be iced.

Once the cake layers come out of the oven, let them rest a few minutes before trying to separate them from the baking pans. Run a knife around the edge to loosen the cake, then gently flip the tin over onto your hand or onto a cooling rack. Let the cake layers rest until completely cooled.

When the layers are no longer warm, place the first layer on a cake stand and add the frosting to the middle. Slowly spread to the edges, leaving about 1/2 of space from the edge of the cake. Add next layer and repeat. You don't want thick layers of icing between the cake layers. This could create an unstable foundation for the cake and lead to cracking or potentially running out of icing for the outside of the cake.

Finally, add the third layer to the top and start icing from the center to the edges and then down the sides. Once the entire cake has its icing, refrigerate for an hour to allow the flavors to meld and for the cake to settle before serving.

This is one of the first recipes that Papa ever shared with me. It's deceptively easy, but looks like it took hours to make! It has great flavor, looks impressive, but even a novice baker can make it. It's the best of both worlds!
I don't remember the exact holiday that we made this cake for, but I do remember that Papa wanted me to try my hand at making it since he hadn't had one in a while. After that get together the Pea-Pickin' Cake became a regular favorite at family functions. It's light and fruity, not something that I would typically like in a cake, but it was soooo good and doesn't weigh you down like other desserts. Also, kids love this one! It's always a big hit.
