Ingredients: Salmon Butter 1 large yellow onion (chopped, not minced) 1/4 cup flour 2 cups sour cream 1/2 cup grated Parmesan cheese (optional) Salt and Pepper to taste (approximately 1 teaspoon each) Paprika

Directions: |
Directions:Butter a shallow baking dish large enough to accommodate the salmon. Season salmon with salt and pepper and place in baking dish. Gently melt 1/2 stick of butter in medium skillet and add the chopped onion and saute until transparent then add 1/4 cup of flour to the onions. Remove skillet from the heat and blend in 2 cups of sour cream, the grated Parmesan cheese (optional) decrease the amount of salt if you use cheese. Salt and pepper to taste. Spoon the above mixture over each piece of salmon. Sprinkle paprika over the salmon.
Bake for 35 minutes at 350 degrees.
The topping on the salmon prevents it from drying out if you leave it in the oven for more than the 35 minutes. Salmon pieces can touch but attempt to keep the topping on each designated piece of fish.
Note: Sour cream tends to afford liquid, flour is necessary to ensure that the sour cream holds its consistency. |

Notes: This recipe is not exact as it depends upon the number of people to be served. I usually will plan on 1/4 pound of salmon fillet per person; each fillet should be at least 1/2 inch thick.
