Pan / pot size and size of cans of crushed tomatoes and sauerkraut vary depending on the quantity of ribs or chops you prepare. (Apply crushed tomatoes and sauerkraut liberally.)

Start by cutting the ribs into manageable pieces and place on deep roasting tray.

Salt and pepper to taste .

Place uncovered, into 350 oven for 45 min or whenever grease drains and meat slightly browns.

Pour a generous layer of crushed tomatoes in bottom of large roasting pan.

Scatter a little brown sugar over tomatoes.

Set first layer of ribs into pan over crushed tomatoes.

Place a layer of well drained Bavarian style sauerkraut over top of ribs.

Set in next layer of ribs.

Pour another layer of crushed tomatoes over ribs.

Add just a little more brown sugar.

Repeat layering until all the ribs are in pot, then pour any remaining crushed tomatoes and sauerkraut over top.

Salt and pepper one last time to taste.

Put cover on roasting pot, back in 350 oven, check on them after 45 minutes.

Depending on number of layers, it’s done when ribs begin to separate from bone.

Scoop (shovel) into large bowl(s).
Serve with large bowl of mashed potatoes and jars of apple sauce.
Place a couple of loaves of hard crust rye bread (pulled apart, not sliced) on table.
