2 filet mignons (5 to 6 ounces each, about 1 1/2 inches thick)
Coarse salt and very coarsely ground pepper
4 teaspoons olive oil
4 teaspoons butter

Directions:
Directions:
Season filets very generously on both sides with salt and pepper (especially pepper), patting in firmly.

Allow meat to come to room temperature.

Heat oil and butter in a small skillet over medium-high. Cook filets until desired doneness, 3 to 5 minutes per side (depending on thickness) for medium-rare.

With a large spoon, baste the meat while it is cooking, tilt the pan to the side to baste.

**** Can also be on the grill - same recipe - except spoon butter on the top of the felets on the grill.
