2 lbs. ground beef
1 onion, diced
3 cloves garlic, minced
1 tbsp. oil
2 tbsp. chili powder
2 tsp. dried oregano
1 tsp. ground cumin
2 tbsp. flour
1 (28 oz.) can diced tomatoes with juice
1 (7 oz.) can diced green chilies
2 - 3 c. grated cheddar cheese
Salt and pepper to taste
1 (8½ oz.) package corn muffin mix
1 (12 oz.) can whole kennel corn, drained
2 eggs
⅓ c. sour cream

Directions:
Directions:
1. Cook beef, onion, and garlic in oil in cast iron frying pan until meat is done. Drain off excess fat.
2. Combine flour, chili powder, oregano, and cumin then sprinkle over meat.
3. Stir, cooking mixture over medium heat for 1 minute.
4. Mix in green chilies and tomatoes with juice.
5. Cover with shredded cheese and set aside.
6. Mix eggs and sour cream into corn muffin mix until dry ingredients are moistened.
7. Fold in drained corn
8. Space rounded spoonfuls of cornbread mixture evenly on top of cheese
9. Bake at 375º for 20 - 30 minutes until corn dumpling are browned and mixture is bubbling.
10. Remove from oven, let stand for 5 - 10 minutes.
