1 6-oz box lime Jello
1 can pears (save juice) cut into bite-size pieces
1¾ c pear juice and water
1 tsp salt
1 8-oz cream cheese
2 c boiling water
¼ tsp mint extract

Directions:
Directions:
In a medium bowl, dissolve Jello in boiling water. Add enough water to pear juice to make 1¾ cups and add to Jello. Measure 2 C of Jello and pour into 8 x 8 pan or mold and refrigerate. When it's partially set, fold in pears. Mix the rest of the Jello with cream cheese, salt and mint extract. Mix until smooth. Pour over set Jello and pears. Allow enough time to fully set before serving.

This is a great, refreshing Jello dessert. Looks really pretty in a mold because of the 2 layers. You can garnish with fresh mint leaves and whipped cream.

One of my roommates in college, Suzanne Waddell, made this dessert for us, and I really loved it. There were 4 of us at 1206 Stearns West, an apt. dorm, in Williams Village at the University of Colorado in Boulder.
