Butter 6 Tbsp
Onion, chopped 1 lg.
Yellow Squash, sliced 10 C.
Water ½ C. or ⅓ C water and ⅛ C. Jack
Pimentos, diced & undrained 2 oz jar
Salt and Pepper to taste
Cornbeard or Crackers crumbled 2-3 C.
Cheddar Cheese, grated 2 C.

Directions:
Heat oven to 375º.
Grease 9 X 13 baking/casserole dish.
Melt 4 Tbsp in large saucepan over medium heat.
Stir in the onion and cook until tender, stirring occasionally, 7-8 minutes.
Add the squash and water or water and Jack. reduce the heat, cover and simmer about 20 minutes.
Mash squash with a fork to break up large pieces.
Stir in pimentos.
Pour squash in casserole dish. Combine the crumbled cornbread/crackers and the cheese and sprinkle over the top.
Dot with remaining 2 Tbsp of butter and bake 20-30 minutes or until bubbly and the topping golden brown.
