3 T olive oil
1 yellow or white onion, sliced
1 head fresh cauliflower broken into florets
kosher salt
5 C hot water
Extra Virgin Olive Oil for garnish
Freshly ground black pepper

Directions:
Directions:
1) Warm the olive oil in a heavy-bottomed pot or dutch oven. Sweat the onion in the olive oil over low heat without letting it brown for 15 minutes. 2) Add the cauliflower, salt to taste, and 1/2 C of hot water. Raise the heat slightly and cover the pot tightly. Stew the cauliflower for 15-18 minutes or until tender. Then add 4 1/2 C of hot water to the pot. Bring to a low simmer and cook an additional 20 minutes. 3) Working in batches, puree the soup in a blender into a very smooth, creamy consistency. Let the soup stand for 20 minutes. Soup will thicken slightly. 4) Reheat the soup if necessary. Serve hot, drizzled with EVOO and freshly ground pepper. 5) If desired add chopped bacon, sliced Italian sausage, or other flavorful protein.
