2 C flour
2 C sugar
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp pumpkin pie spice (see note below if you do not have this)
2 tsp cinnamon
2 C fresh pumpkin (15 oz can is ok)
¾ C oil
4 eggs

Directions:
Directions:
Preheat oven to 350º. Stir together dry ingredients. Add pumpkin, oil and eggs. Beat well. Bake in 9x13” pan (spray with cooking spray). Bake for 20-25 minutes (may need more time). Glaze or sprinkle with powdered sugar if desired. (Hint: the glaze or powdered sugar melt when these are covered in a container, so if you do this, apply it just before serving).

Note: If you don’t have pumpkin pie spice, you can substitute (to make 1 tsp): 1/2 tsp cinnamon, 1/4 tsp ground ginger, 1/8 tsp nutmeg.
