5-6 lb. whole chicken
2 tablespoons chopped fresh rosemary
2 tablespoons sea salt
3 garlic cloves, chopped
1 tablespoon freshly cracked black pepper
1 large red onion, chopped into large pieces
¼ cup balsamic vinegar
¼ cup red wine

Directions:
Directions:
Remove any fatty pieces from chicken. Pull out the neck, giblets and liver (not used in this recipe). Rinse bird and pat it dry.

In small dish, combine the rosemary, sea salt, garlic, and pepper. Rub all over the chicken inside and out. Cover chicken with plastic wrap and place in refrigerator. Let sit for at least one hour.

Preheat oven to 350.

Sprinkle onions in 13 x 9" pan. Place chicken on top. Pour vinegar and wine over the chicken. Roast chicken 20 minutes per pound. Let rest 10 minutes before carving.
