2 ½ cups unbleached white flour
1 tsp. salt
1 tsp. baking soda
1 T. chopped rosemary
2 T. chopped sun-dried tomatoes
About 1 ¾ cups buttermilk

Directions:
Preheat oven to 450 degrees. Sieve the flour, salt, and baking soda into a large wide mixing bowl; gently mix in the rosemary and tomatoes. Make a well in the center and pour in most of the milk.

Using one hand with the fingers open and stiff, mix in a full circle, drawing flour from sides of bowl. Add more milk, if necessary. Dough should be soft, not too wet and sticky. Mix as quickly and as gently as possible, keeping it light and airy.

When dough all comes together, turn out on floured work surface. Roll around gently with floury hands, for a few seconds, just enough to tidy it up.

Pat gently into a round, about 2-inches high. Place on a lightly floured baking sheet. With a sharp knife, cut a deep cross on it. Let cuts go over the sides of the bread. Prick with knife at the four triangles (according to Irish folklore, this is to let the fairies out).

Bake 10 minutes then turn down the oven to 400 degrees and bake 25 minutes more or until done.

Makes one loaf.

This makes excellent grilled cheese sandwiches if you slice it thin and use Dubliner cheese. Use Kerrygold butter and have have "Irish Grilled Cheese."
