For the SALMON:
¼ cup tomato paste
2 Tbsp. olive oil
1 tsp. mustard
1 Tbsp. dried Italian herbs
1 tsp. ground paprika
1/2 tsp. salt
1 ½ lb. salmon fillet

For the VEGETABLES:
2 large red peppers, sliced
2 large zucchinis, sliced
1 Tbsp. dried Italian herbs
1 Tbsp. olive oil
Salt and pepper, to taste
½ lb. cherry tomatoes

Directions:
Directions:
Heat oven to 400 degrees. Line a sheet pan with baking parchment.

Stir tomato paste, olive oil, mustard, and seasonings in a small bowl. Place the salmon fillet in the middle of a sheet pan and spread everything over it.

Place the peppers and zucchini in a large bowl and toss with dried Italian herbs, olive oil, salt and pepper. Place around the salmon. Arrange the cherry tomatoes on top and bake for 15-20 minutes, or until salmon flakes easily.
