2 Tbs. red curry paste
3 Tbs. olive oil
1 lb. boneless, skinless chicken breasts
½ bunch basil
½ bunch cilantro
17 oz. coconut milk
2 Tbs. soy sauce
Salt and pepper to taste

Directions:
Directions:
Cut chicken into half inch strips. Chop the basil and cilantro, set aside.

In a large pan, over medium heat, combine the olive oil and curry paste. Add the chicken and stir frequently until browned.

Add the basil, cilantro, coconut milk and soy sauce to the pan. Season with salt and pepper. Stir to combine and bring to a simmer. Cover with the lid and allow to simmer for 30 minutes.

Serve with rice.
