2 ¾ cups all-purpose flour
1 ¾ cups packed brown sugar
5 teaspoons pumpkin pie spice
1 ½ teaspoons baking soda
1 ½ teaspoons salt
¼ teaspoon baking powder
1 can (16 oz.) pumpkin
1 cup vegetable oil
2 large eggs

Directions:

Preheat oven to 350 degrees. Grease and flour four 6 x 3 x 2” mini loaf pans.
Mix flour, brown sugar, pumpkin pie spice, baking soda, salt, and baking powder in a large mixer bowl. Add pumpkin, oil, and eggs and beat with electric mixer on low speed until dry ingredients are moistened and mixture is smooth. Spoon batter into pans, spreading evenly.

Bake 45 to 55 minutes until a wooden pick inserted in center comes out clean.
