6 slices bacon, cooked until crisp and cut into 1 inch pieces
5 cups of popped popcorn
1/2 cup brown sugar, packed
4 T. butter
2 T. light corn syrup
1/4 t. baking soda
1/2 t. maple flavored extract
1/2 cup pecans, chopped and toasted

Directions:

Preheat oven to 250 degrees. Line a baking pan with foil, spray foil with non-stick cooking spray.

Combine popcorn, bacon, and pecans in a large bowl.

In a small saucepan, combine the brown sugar, corn syrup, and butter. Cook over medium heat stirring well. Once it's melted stop stirring and insert a candy thermometer.

Continue to cook the mixture until the candy thermometer reaches 238 degrees.

Once mixture reaches 238 degrees, remove from heat and add maple extract and baking soda. Stir well. The mixture will foam up.

Pour the foamy mixture over the popcorn, bacon, and pecans, tossing until all pieces are coated.

Pour into prepared pan. Bake 45 minutes, stirring every 15 minutes, until golden.

Allow to cool completely. Store in an airtight container for up to one week.
