3 to 5 large beets, scrubbed, peel skins if desired.
Beets come in a variety of colors: red, yellow, orange or candy cane-striped Chioggia beets

Scrub the beets to get rid of any dirt. Remove ends. I leave the peelings on for the nutrients, but the beets can be peeled if preferred.

Line a baking sheet with foil (for easy clean up). Spray lightly with butter or olive oil flavored spray. Slice the in ½ inch slices or cube into large chunks. Arrange beets on the baking sheet. Bake at 350º until a fork can be easily inserted, approximately 45 minutes.
