Thai Basil Dressing


Ingredients:

1/2 cup Thai Basil, chopped fine
1/2 cup cilantro, chopped
1/4 cup lime juice
1/4 cup orange juice
1 T. honey
2 t. freshly grated ginger
1 t. lime zest
1/2 t. salt
1/2 t. black pepper
1/4 cup canola oil

Directions:

Add all ingredients, except canola oil, to food processor and blend well. Add canola oil and blend for thirty seconds.
 

Summer's Bounty Salad

8 ears of fresh sweet corn, husked and cooked until tender
1 small onion, chopped
2 cups of cherry or grape tomatoes, cut into coins
4 to 5 large Thai Basil leaves, roughly chopped
1 green onion, finely chopped

When corn is cool, cut off the cob.

Mix all ingredients together. Drizzle Thai Basil dressing over salad and toss to coat.

Let chill for one hour and serve.
