4 Egg Whites (room temperature)
1 cup Granulated Sugar
1 tsp. Cornstarch
1 tsp. Malt Vinegar

Filling:
1 cup Heavy Whipping Cream
2 tbsp. Granulated Sugar
1 tsp. Vanilla Extract

Topping:
1 container Strawberries (sliced)
1 can Mandarin Oranges (drained)
2 Kiwi (diced)

Parchment Paper (to line baking sheet)

Directions:
Preheat oven to 250º (low temperature).

Line a cookie sheet with parchment paper.

Beat egg whites in a large bowl with an electric mixer until foamy and beginning to hold their shape. Gradually beat in 1 cup of sugar (one tablespoon at a time) until meringue is stiff. Add malt vinegar and beat for 30 seconds. Add corn starch and beat for an additional 30 seconds.

Spread meringue in a 9 inch circle on the parchment paper. Using the back of a spoon, push the meringue to the outer edges so it's slightly higher around the edges than in the middle.

Bake for 1 Hour and 15 Minutes at 250º

Let meringue cool completely. Gently remove from parchment paper and slide onto a flat platter. Set aside until ready to serve.

Whip heavy cream, sugar and vanilla with an electric mixer until cream holds soft/medium peaks. Top the meringue shell with cream and layer fruit on top.

Serve and enjoy!

This dessert is a family favorite and most requested! We serve it instead of traditional birthday cakes at family parties. Feel free to top with your choice of favorite fruit.

Because the meringue is delicate, it's best to assemble it just before serving. Don't worry if it starts to crack and fall apart. The whipped cream will hold it all together!
