4 Medium to Large Potatoes (Yukon Gold)
3 Hard Boiled Eggs
Mayo
About 2 Tbs Dijon Mustard
Fresh Parsley
Scallion - Sliced
Onion Powder
Garlic Powder
Salt
Pepper
(Celery - Sliced)

Directions:
Directions:
Wash potatoes.

Boil water in medium pot. Salt water when boiling, add potatoes whole. Boil until soft. Drain and peel skin when cool. Set aside.

Once potatoes are cool, slice and or chop into desired sized pieces. Transfer to large mixing bowl. Peel eggs, (slice celery) slice thin, add to mixing bowl.

Mix in mayo, mustard, and scallion. Season with salt (celery), pepper, onion powder, garlic powder.

Garnish with fresh scallion.
