2 C. roasted chicken, shredded
1 10 oz. can of condensed cream of chicken soup
1/4 C. milk
1 6 oz. box chicken seasoned stuffing mix
1 large egg, slightly beaten
2 Tbsp. onions, finely chopped
2 Tbsp. celery, finely chopped
Breadcrumbs for dredging
Vegetable oil for frying

Mix well the chicken, soup, stuffing mix, egg, onion and celery.  Refrigerate for at least 3 hours. Create a log shape from about 3/4 cup of mixture.  Gently drop onto the counter to flatten the bottom to form a traditional cone shape roughly 3” high and 2“ diameter (or form patties for a simpler method). Roll croquettes in bread crumbs (at this point you can freeze them for up to 2 months or cover them and refrigerate overnight to use them the following day.  Just bring them to room temperature when ready to use if frying them) Fry in about 1/4'” of oil in skillet over medium heat, turning occasionally until golden brown on all sides and bottom, about 10-15 minutes. Makes 8, or serves 4.

I did not make the sauce. I just used chicken gravy mix.  Also, I was able to get 12 out of my mix.  I fried up 6 for us to eat and froze the other 6 for another meal. This recipe was originally published in an older Betty Crocker cook book.
