1 tsp. vanilla
1 egg, slightly beaten
1 cup buttermilk (or 1 T. white vinegar or lemon juice with enough milk to make one cup and let stand 5 minutes)
½ cup brown sugar packed
1/3 cup butter, softened
1 cup quick oats
1 1/4 cup flour (or 1 cup flour and ¼ cup baking mix)
1 tsp. baking powder
1 tsp. salt
½ tsp. soda
4 tsp. instant coffee
½ tsp. cinnamon
½ cup semisweet chocolate chips

Directions:

Heat the oven to 400 degrees. Beat egg; stir in vanilla, buttermilk, brown sugar and butter. Mix in remaining ingredients; just until flour is moistened.

Bake 20-25 minutes.
