1 16 oz. bag lentils
2 tbsp. olive oil
1 cup diced celery
1 cup diced carrots
1 medium onion
2 bay leaves
4 cups water
2 cups low sodium chicken broth
Salt and pepper to taste

Directions:
Directions:
Sort and rinse lentils. Saute celery, carrots and onion until tender. Add 4 cups of water, lentils and bay leaves; bring to boil. Reduce heat, cover and simmer. Add broth as needed to increase liquid until lentils are tender and soup thickens. Cook for 45 - 60 minutes.

In our family, lentil soup is served on New Year's Day to bring good luck and prosperity for the coming year!
