10-12 Red-skinned potatoes
1 lb. bacon
1-2 onions, chopped
6 hard-boiled eggs, chopped
Pickles or relish
Pickle juice
Vinegar
Mustard
Mayo
Salt and black pepper

Directions:
Directions:
Boil potatoes in skin. Leave some skin on and chop into chunks. Fry bacon until crisp, then crumble, saving 2 T. for topping. Fry onions in bacon drippings until transparent. Mix all ingredients. Top with reserved bacon.

Shirley's note- This is the best potato salad I have ever tasted. Everyone else thinks so too, as it is always requested at family gatherings.
