1 cup warm water
2 tablespoons honey
2-1/2 teaspoons instant dry yeast
3/4 cup milk, scalded
6 tablespoons unsalted butter (3 ounces)
1 egg
1 cup bread flour
1/3 cup dried milk
1/3 cup potato flour
1/2 teaspoon kosher salt
3-1/2 cups spelt flour

Combine water and honey. Sprinkle with the yeast and let proof 10 minutes.

Scald the milk and add the butter to melt. Let cool to room temperature, then whisk in the egg.

In the bowl of a stand mixer, whisk together the bread flour, milk, potato flour and salt. Add the yeast mixture to the milk mixture and whisk into the flour mixture. Apply the dough hook and mix in the spelt flour. Cover the bowl and let rise 90 minutes.

Grease bread pan with lid. Turn the dough out onto a lightly floured surface and form into loaf. Put in the bread pan (without the lid) and then put inside a plastic bag. Let rise until 1/2-inch from the top of the pan. Apply the lid and let rise an additional 15 minutes. Preheat oven to 350 degrees.

Bake bread 25 minutes. Remove the lid and bake an additional 10 to 15 minutes.
