2 Eggs
½ Cup Oil
1 Cup Sour Cream
2⅔ Cup Flour
1 Teaspoon Baking Soda
½ Teaspoon Salt
1⅓ Cup Brown Sugar
2 Cups Finely Diced Rhubarb

TOPPING
½ Brown Sugar
½ Cup Chopped Nuts
2 Tablespoons Melted Butter (Oleo is OK)

Directions:
Directions:
Beat eggs and oil together. Add sour cream.
Mix flour, baking soda, salt, brown sugar and rhubarb together. Add to egg mixture.
Mix all together just until blended. Spoon into muffin tins.

Mix Topping, sprinkle onto.

Bake at 325º for 25-30 minutes. Cool on baking rack.
