Crock Pot Cheesecake Recipe

2 (8 oz.) pkgs. cream cheese, room temp
2 eggs
½ cup sugar
1 tsp. vanilla
2 T. lemon juice
½ tsp. grated lemon zest
4 full graham crackers
2 T. butter, melted

Directions:
Directions:
Crush graham crackers and mix with melted butter. Pat into bottom of 7” springform pan. Cream together cream cheese and sugar. Add eggs one at a time. Add vanilla, lemon zest, and lemon juice. Pour over crust and smooth top.
Put rack in bottom of crock pot or use canning jar lids to make a rack. Pour in enough water to come to top of rack or jar lids (make sure pan sits above water not in it). Place cheesecake on top of rack. Put lid on crock pot and cook on high for 2 to 2 ½ hours or until the center does not have a watery consistency when you stick a knife into it. The cheesecake will begin to crack on the sides. Let cool for 30 minutes to one hour. Let set in the refrigerator for at least one hour. Serve.
