Funnel Cake Recipe

1 ¾ c. all-purpose flour
1¼ tsp. baking powder
¼ tsp. salt
1 egg
1 tsp. vanilla flavor
3 tbsp. granulated sugar
1⅓ c. water or milk (I use water)
Vegetable oil, for frying
1 c. powdered sugar

In medium bowl, whisk flour, salt, and baking powder. Set aside.

In a large bowl, add water or milk, sugar, vanilla and egg.

Add the flour mixture and whisk until smooth.

**The batter should resemble thick pancake batter -- pourable, but thick enough to hold it's shape when poured into hot oil. If it's too thick, add a bit more of water. If it's too thin, add a bit more flour until you get the right consistency.

Pour oil in an 8-inch skillet. The oil should be about an inch high. Heat until it reaches 375º.

Using a funnel, pancake batter dispenser or make a spout with a plastic container, pour batter in the pan in a circular motion. Do about 3 circles, then fill in with criss cross in center. This will hold it all together.

Fry in the oil until the bottom turns a dark golden brown, then flip over and wait for the other side to brown.

Place funnel cake on paper towels to absorb extra oil. Cut into pieces or leave whole.

Sprinkle powered sugar on top or use a fruit topping, if desired.
