Millie's Pork Chops and Rice Recipe

2 lbs. Pork Chops (more or less)* 1 can Mushroom Soup, undiluted
1 medium Onion, chopped 3 C cooked Rice
1/2 stick Butter 1 can Peas (optional,but recommended)*

Directions:
Directions:
Season pork chops as you like them. I use salt, pepper, onion & garlic powder.

Sear them over high heat in a little oil.

Saute the onion in the butter until slightly browned.

Combine the rice, mushroom soup, onions & peas (water included).

Grease a medium roasting pan. Put 1/2 the rice mixtured into the pan; place the seared prk chops on this layer.

Cover with the rest of the rice mixture.

Cover the pan & bake in a 375 degree oven for about an hour, until the pork chops are cooked & the rice has absorbed the extra moisture.

This is one of Joe's favorite recipes of his Mom, Millie.

*You can use boned or bone-in chops. Joe likes the boneless because they're easier to eat. I think the bone-in chops add a little extra flavor & prefer it this way

Make sure to wash the chops well, if there are any bone chips from the butchering they add almost unpleasant texture.

**I never left out the peas, but if you do, I think you should add about an extra 1/4 - 1/2 C of water.
