1 lb. ground beef
3/4 c. onion, chopped
1 1/2 t. chili powder
1/2 t. salt
1/2 t. garlic salt
16 oz. can tomatoes, cut up
15 oz. can red kidney beans, rinsed
3/4 c. quick cooking rice, raw
3/4 c. water
3 T. green pepper, chopped
3/4 c. shredded cheddar cheese
Crushed corn chips, optional

Directions:
Directions:
In skillet, cook ground beef and onion till beef is brown and onion is tender; drain. Sprinkle meat with seasonings. Stir in undrained tomatoes, beans, rice, water, and green pepper. Cover and simmer, stirring occasionally, for 20 minutes. Top with cheese. Cover and heat until cheese melts, 3 minutes. Sprinkle with crushed corn chips.

Janet's note: We made this while working on the cookbook and really liked it! We didn't have quick rice, so used regular and doubled the water. It was delicious!
