1 1/4 c. brown rice flour
1/4 c. cornstarch
2 t. baking powder
1 1/2 t. salt
few dashes of cayenne
1 c. club soda
Vidalia onions, sliced thickly and separated into rings
Peanut oil (for its high smoke-point)

Directions:
Directions:
Mix all batter ingredients. Batter should be thick enough to stay on rings. Dip onion rings into batter and deep fry.

This makes very crispy onion rings! I always make them for my birthday supper. They are 2nd best only to Popeyes!
