1 c. salted butter, softened (2 sticks)
1 c. granulated sugar
½ c. brown sugar, packed
1 egg
2 tsp. real Watkins vanilla
1 ⅔ c. all-purpose flour
½ tsp. ground cinnamon
¾ tsp. baking soda
¼ tsp.salt
⅛ tsp. baking powder
1½ c. quick cooking oats

Preheat oven to 350º.

Line 2 large baking sheets with parchment paper; set aside.

In a large bowl, with an electric mixer, beat butter and both sugars until fluffy. Mix in egg and vanilla until well blended.

Combine flour, cinnamon, baking soda, salt and baking powder in a bowl. Stir into fluffy sugar mixture. Gently fold in oats until combined.

Shape dough into 2-inch rounded balls or use a cookie scoop.

Place on prepared baking sheet about 2 inches apart. Flatten with the bottom of a measuring cup dipped in water or sugar.

Bake for 7-8 minutes. Let cool on baking sheet 5 minutes before moving to a wire rack to cool completely.

You can add raisins or other dried fruit in this recipe. But my family loves this oatmeal cookie exactly like this recipe is made!
