2 c. gluten free flour
1 t. xanthan gum (omit if your
blend has it)
1 1/2 t. baking powder
1/4 t. baking soda
1/2 t. kosher salt
1/4 t. cinnamon
1/2 c. sugar
3/4 c. milk
6 T. unsalted butter, melted/cooled
1/4 c. honey
2 eggs
1 t. vanilla

Directions:
Directions:
In a large bowl, mix dry ingredients. Add rest of ingredients, mixing just to combine.The batter will be thick and smooth. Pour batter into greased 12-cup muffin tin. Bake 20 minutes at 350º or until lightly golden brown and a toothpick comes out with no more than a few moist crumbs attached. Cool in the tin 10 minutes; move to a wire rack to cool completely.
