Smoked Salmon
Broccolini
Eggs
Chives or Spring Onions
Hollandaise Sauce Packet (usually needs butter and milk)
English Muffins

Directions:
Directions:
Salmon Eggs Benedict
1) Prepare Hollandaise Sauce according to packet directions
2) Poach desired amount of Eggs (google how to on you tube).
3) Toast English Muffins and top with Salmon, and Poached Egg (may want to cool egg to eat cold)
4) Top with Hollandaise sauce and chives for garnish

Broccolini Eggs Benedict
1) Roast Broccolini, wash, sprinkle with olive oil or avocado oil, salt and pepper. Bake in oven at 375º until tender.
2) Prepare Hollandaise Sauce according to packet directions
3) Poach desired amount of Eggs (google how to on you tube).
4) Toast English Muffins and top with Broccolini and Poached Egg
5) Top with Hollandaise sauce and chives for garnish

The love story is, My (Laura) favorite breakfast is Eggs Benedict and my favorite restaurant is Max Londons in Saratoga Springs NY. It is there I had the Brunch Special Broccolini Benedict. So delicious. Due to Covid-19 this year with restaurants closed, I've been inspired to enjoy my favorites at home. I hope you enjoy!
