2 T. olive oil
3 cloves garlic, minced
1 large onion, diced
1 lb. Italian sausage
1 lb. ground beef
28 oz. whole tomatoes, undrained
2 (14.5 oz) tomato sauce
salt and pepper, to taste
2 t. Italian seasoning
1/2 t. red pepper flakes
16 oz. ziti, cooked not quite al dente,
(drained and rinsed with cold water)
15 oz. whole milk ricotta cheese
24 oz. mozzarella cheese, shredded
1/2 c. grated parmesan cheese
1 egg
fresh minced parsley

Directions:
Sauté onions and garlic in oil until starting to soften. Add Italian sausage and ground beef; cook until browned. Drain, leaving a bit behind for flavor and moisture. Add tomatoes, tomato sauce, salt and pepper, Italian seasoning, and red pepper flakes. Simmer 25-30 minutes, then remove 3-4 c. of the sauce to a bowl to cool down. In a separate bowl, mix together the ricotta cheese, 2 c. mozzarella, Parmesan, egg, and salt and pepper. Add pasta and toss slightly (there should still be large lumps.) Add the 3-4 c. cooled meat sauce and toss to combine. Add half the coated pasta to a large casserole dish or lasagna dish. Spoon half of the remaining sauce over the top, then top with half the remaining mozzarella cheese. Repeat with another layer of the coated pasta, the sauce, and the mozzarella. Bake 20 minutes at 375º, or until bubbling. Remove from oven and let stand 5 minutes. Sprinkle with parsley.
