1 lb. candied cherries
1 lb. candied pineapple
1 lb. raisins
1 lb. chopped dates
4 c. pecans, chopped
1 c. brown sugar
1/2 c. butter
4 eggs, separated
3 c. flour
1 t. nutmeg
1 t. cinnamon
3/4 c. coca cola
1 T. baking soda in 1 T. milk

Directions:

Cut fruit in small pieces. Cream sugar and butter. Add beaten egg yolks. Add spices to 2 c. flour; add to creamed mixture, alternating with coca cola. Stir in milk and baking soda. Dredge fruit and pecans with other cup of flour. Stir in. Beat egg whites until stiff. Fold gently into batter. Drop by teaspoon onto greased cookie sheet or parchment paper. Bake at 350º for 20 minutes.

Shirley's note: Even if you don't care for fruit cake, I think you will like these cookies. They are especially nice during the holidays.

Janet's note: For a version that's a little easier, I don't separate the eggs - and Mama says she can't tell the difference! These also turn out well with GF Flour Blend.
