Rhubarb Crunch Recipe

1 C. flour
C. oatmeal
1 t. cinnamon
C. butter, softened
1 C. brown sugar, finely packed
4 C. diced rhubarb
1 C. water
1 t. vanilla
1 C. sugar
2 T. corn starch

Mix first five ingredients as for pie crust, leave in crumb form. Press half of crumb mixture into greased, 9-inch square pan and cover with rhubarb.
Combine water, vanilla, sugar and corn starch, and cook until clear. Pour over rhubarb and top with remaining crumbs. Bake 40-45 minutes at 350.
