1 package rice paper wrappers
warm water for soaking rice paper wrappers
1/4 cup cilantro leaves (optional)
1/2 cup julienned red bell pepper
1/2 cup julienned yellow bell pepper
1 cup snow peas, stringed and julienned
3 1/2 oz package of enoki mushrooms
1 cup bean sprouts
1/4 cup pickled ginger
2 tbs black sesame seeds (or toasted white sesame seeds)
handful of seasoned buckwheat or soba noodles cook according to package directions (I used plain white rice noodles)

Orange-chilli dipping sauce:
1/2 cup freshly squeezed orange juice
3 tbs sugar
3 tbs soy sauce
2 tsp lime juice (about 1/2 lime)
1 tbs sesame oil
1 tbs balsamic vinegar
1 tsp chili flakes
1 tsp kosher salt

Ingredients should be ready (cut up) for assembly. Mise-en-place

In a large pie plate with a high edge filled with warm water, soak 1 rice paper wrapper for about 20 seconds or until soft. Lay the wrapper on a flat surface. About 1/3 from the bottom of the wrapper, create a 3 inch long row by placing some cilantro leaves, red/yellow pepper, snow peas, mushrooms, bean sprouts, noodles and ginger. Season to taste with salt/pepper. Carefully fold bottom of the wrapper over the vegetables, rolling leaving seam side down. Cut into 2-3 inch pieces.

You can prepare this one day ahead but you need to cover with a damp (durable) paper towel, then with plastic wrap so it doesn't dry out.

Dipping sauce:
Whisk all ingredients, let stand at least 30 minutes so that the flavours can infuse. Serve at room temperature.

This might seem daunting at first but it's super easy and you can use whatever ingredients you want. I've used shrimp (cut in half lengthwise), thinly sliced chicken, bib/Boston lettuce, regular lettuce, shredded carrots ... pretty much anything that's crunchy because it's all about texture.

It's definitely an amazing, delicious, impressive appetizer.
