1 egg
1 c. milk
1 c. flour
1 T. oregano
1/4 t. garlic powder
1/8 t. salt
1/8 t. pepper
1 c. shredded sharp cheese
8 oz. tomato sauce
1 c. shredded mozzarella
pepperoni and onion or your choice
of toppings

Mix first column. Stir in sharp cheese. Pour into greased and floured 8x8 pan. Bake at 425º for 5-10 minutes, until top is just set. Spread tomato sauce over crust. Sprinkle with toppings of your choice. Turn oven to 375º and bake 15-20 minutes. Sprinkle with mozzarella; bake until cheese melts.

This began as a plain cheese pie--just egg, milk, flour, salt, pepper, and cheese. This was a go-to when one of my girls felt a little sick. But it gradually changed into the recipe above, which we use today. The crust won't be a crispy pizza crust, but more like a dense quiche.

Janet's note: This turns out very nice with GF Flour Blend (no xanthan).
