3 c. water
1/2 t. salt
1 c. quick cooking grits
1/2 c. butter
6 oz. Velveeta cheese
2 eggs
1/2 c. milk
1/2 t. pepper
1/4-1/2 c. pickled jalapeños, chopped
crumbled bacon, sausage or shrimp

Directions:
Directions:
Bring water and salt to a boil, add grits; reduce heat. Cook until grits are thickened, 3-4 minutes. Stir in butter and Velveeta (can melt these together in microwave before adding, to help with melting). Mix eggs, milk and pepper; add to grits. Stir in chopped jalapeños. Pour into casserole dish. Bake uncovered at 300º for 45 minutes or until set.
