½ c. shredded coconut (unsweetened)
½ c. chia seeds
1 c. coconut milk
1 c. coconut water
2 tsp. vanilla extract
½ tsp. salt

raspberries, blueberries or other fruit as a topping or middle layer between two layers of the pudding (optional)

In a small bowl or Mason jar, add all ingredients EXCEPT fruit, and mix well until combined
Refrigerate at least 2 hours
Top with fruit to serve or layer fruit in a small Mason jar for a layered effect
