2 tbsp olive oil
1 med onion, finely chopped
4 garlic cloves, smashed
1 tube double-concentrated tomato paste
½ tsp crushed red pepper flakes
2 oz vodka
¾ c heavy cream
pasta (rigatoni is great)
4 oz parmesan

Bring pot of salted water to boil. Cook pasta at same time.

Heat oil in dutch oven (or large pot) over medium. Cook onion and garlic, stir constantly, until onion starts to brown, 5-7 min. Add tomato paste and pepper flakes and stir. Cook, stirring often, until paste is deep red and starting to brown, 5-7 min. Add vodka, scrape up brown bits, reduce heat to low.

Scoop out ¼ cup pasta water and add heavy cream. Add that mix to onion mix and cook until smooth sauce forms.

Transfer pasta to dutch oven, stir in more pasta water to create more of a sauce (if needed) and add half the parmesan, stir pasta to coat.

Plate and top with remaining parmesan

Another really quick, very easy pasta recipe. I've made vodka sauces from scratch before and this quick version was better than all of those. Make sure to cut up the onions and garlic finely, because they will be very large in the final sauce if you don't.
