2-3 lbs. ham hocks and/or ham, cubed 1” pieces
2 lbs. nopales, cubed...you can find in Mexican markets
1 (15 oz) can of tomatoes, puréed
3-4 tbsp. El Pato tomato sauce, spicy (if you don’t like a little kick, omit)
1/4 cup cilantro, chopped
1 cup onion, diced
3 garlic cloves, finely minced; or, 1-2 tbsp. garlic powder
1 tbsp. Chicken bouillon, or more to taste
1 tsp. Lemon pepper

In a large pot, add 6 cups water and nopales. Let it come to a boil.
Immediately dump the nopales in a colander and rinse with cold water. Keep rinsing them to release the slime that comes out of nopales. (This is normal, similar to the aloe vera plant). It may take continuous rinsing.
In the same pot put the ham hocks to boil in 5 cups water until meat is cooked (30-45 minutes).
Take out of pot and let cool.
Meanwhile, in same pot, turn heat to medium. Put in the tomatoes, tomato sauce, cilantro ,onion, garlic, bouillon, lemon pepper. Add the nopales and boil for 20-30 minutes.
When ham is cooled take meat off the bones. Add the ham and boil for another 10 minutes. Taste, if you need to, add more bouillon.

My Dad, Flavio, made this recipe when we were already teenagers. He would clean the nopales (take the thorns off with a sharp knife). I didn’t care for nopales until I tasted this soup.
