1½ tsp. lime zest
1/4 cup lime juice (3)
1 T. sugar
Fresh gr. pepper
1/2 tsp. garlic salt
3 cups seeded and finely chopped watermelon
1 small - medium cucumber, peeled and finely diced
1 jalapeno pepper, seeded and minced
1 mango, peeled and diced
1 small red onion, minced
8 basil leaves, julienned

Tortilla or fresh pita chips

Directions:
Directions:
Stir together lime juice and zest, sugar and pepper in bottom of a bowl. Add cut up watermelon, cukes, jalapeno, mango, onion and basil to the bowl, tossing gently as pieces are added in. Cover and chill until ready to serve. Sprinkle with garlic salt. Keep cold. Serve with pita or tortilla chips- preferably homemade!

We liked adding a little rice vinegar to the lime/ sugar to give more tang. We also liked it with less or no mango as it overpowered watermelon. Mre watermelon and /or a small peach was good too!
