Large Chuck Roast - with bone, chop the meat off the bone into stew size chunks
Canned tomato sauce
1 whole baking potato
spinach
peas
carrotts
kidney beans
green beans
Salt and Pepper
Basil
Parsley
Small pasta
(adjust the vegetables per your preferences)

Directions:
Directions:
Sear the chunks of meat.
Place seared meat and the bones in a large stock pot.
Cover with water + a couple of inches.
Add tomato sauce.
Cook this down a couple of hours.
Add salt, pepper, basil, parsley.
Add the whole peeled potato (this will cook down and add the starch to thicken).
Cook another couple of hours on low.
Add your vegetables and cook another 20-30 minutes.

Cook small pasta to serve with the minestrone.
Serve with parmesean cheese and fresh Italian bread.
