2 c. Bob's Red Mill 1-to-1 GF flour 2 t. baking powder 1/2 t. salt 1 1/4 c. + 1 T. sugar, divided 1 stick butter, browned 2 eggs 1/2 c. buttermilk 1 1/2 c. apples, chopped 3/4 t. cinnamon
Mix dry, reserving 1 T. sugar. Mix wet into dry. Fold in apples. Spoon into a greased and paper-lined 12-cup muffin pan. Sprinkle with reserved sugar. Bake at 350º for 25 minutes. Shirley's note: These are delicious, and so tender!
