1 potato, peeled and chopped
4 c. water, divided
1 pkg. yeast
1 c. lard or Crisco
1 c. sugar
10 - 10 1/2 c. flour
1 1/2 t. salt

Directions:
Directions:
Boil potato in 1 c. water; do not drain; mash. Dissolve yeast in 1/2 c. lukewarm water. In a large bowl, put Crisco, sugar and remaining water (heated); let cool to lukewarm. To large bowl add yeast, potato, flour and salt; stir until like biscuit dough. Cover with a damp cloth. Refrigerate at least 1 1/2 hours. 2 hours before baking take out as much dough as you want to bake now. Let rise. Punch down, shape, and put into lightly greased muffin tins. Let rise again. Bake at 325º for 40 minutes. The rest of the dough stays good covered with damp cloth in the refrigerator for a few days.

This recipe makes a lot and they are delicious. It came from Aunt Minnie V, and had been handed down through the years from her family in Tennessee. The original recipe called for lard.
