Unsalted butter for pan
2 tablespoons all purpose flour mixed with a pinch of sugar
4 large eggs, separated
1/4 teaspoon lemon or vanilla extract
3/4 cup sugar
3/4 cup all purpose of flour
1 teaspoon baking powder

Directions:
Preheat oven to 350 degrees.

Lightly butter a 9 inch cake or springform pan. Dust with 2 tablespoons of flour mixed with a pinch of sugar, making sure the bottom and sides of the pan are well coated. Shake out excess flour mixture.

Beat 4 egg yolks, add 1/4 teaspoon lemon or vanilla extract and 3/4 cup of sugar, and continue beating until the mixture is fluffy and lemon-colored. Mix 3/4 cup of flour and 1 teaspoon baking powder together and stir into the yolk mixture. The dough will be stiff.

Beat 4 egg whites until stiff. Stir one third of the whites into the dough mixture and mix to lighten it. Add the rest of the egg whites, a little at a time, and gently, but swiftly, fold into the mixture. Pour into the prepared pan.

Bake for 45 minutes without opening the oven. If a toothpick inserted in the middle of the cake comes out clean, the cake is done, otherwise cook a little longer. Cool on a wire rack.
